Banoffee Pie Cupcakes

I fancied doing a bit of baking last week, so I made these absolutely delicious Banoffee Pie Cupcakes. I got the recipe from Cupcake Heaven Magazine, however I tweaked the recipe a bit to work with the ingredients I had, but it still tasted lush! 


Banoffee pie is my most favourite dessert ever, so I was extremely excited when I saw the recipe and knew I'd be baking them as soon as possible, and I'm so glad I did as they are amazing!

Here is my tweaked recipe and instructions!

Ingredients:

For the cupcakes;
150g unsalted butter
150g caster sugar
3 eggs
150g self raising flour
1 tsp vanilla extract
1 large banana (the riper the better)

For the frosting;
150g unsalted butter
300g icing sugar
2 tbsp carnation caramel
1/2 tsp caramel flavouring

To decorate;
2 shortbread biscuits
A bag or two of dried banana chips
Carnation caramel to drizzle

Instructions:

1. Preheat oven to 180c/350F/Gas mark 4, and prepare cupcake cases (I ended up making about 16 small cupcakes).

2. Cream the butter, sugar and vanilla extract together until light and fluffy, then add the eggs in one at a time, but mix well after each one. Add the self raising flour and mix well. Mush the banana, then add the whole amount into the mixture and continue to mix until combined. The mixture is now ready for baking so spoon into the cupcake cases. (I found I put too little in each one as I expected the mixture to rise a lot, however I think the banana held it down a bit so maybe try adding a little bit more than usual.)

3. Bake the cupcakes for about 20mins, or until the sponge feels springy, and leave to cool for a while.

4. For the frosting, add the butter and icing sugar into a bowl and mix until smooth. Then add 2 tbsp of carnation caramel and mix well. Then add 1/2tsp of caramel flavouring just to make the frosting flavour stronger. Add a little bit more icing sugar if need be, then place the frosting into a piping bag and pipe onto each cupcake.

6. Sprinkle crushed shortbread, add a banana chip or two and then drizzle a little bit of caramel onto each cupcake for decoration.


... Then Vuala! You should have some pretty little Banoffee Pie cupcakes! I know using caramel isn't really correct for a Banoffee pie as it should be toffee, but I couldn't find anything else suitable, but it still tastes delicious and looks divine!
