Mint Chocolate Cupcakes

My ultimate favourite ice cream of all time is mint chocolate chip, so baking these cupcakes were a must for me! I was so happy with how they turned out I just had to share them with you all. They are for my fiancés birthday today so hopefully his work colleagues enjoy them!


For The Cupcakes:
225g self-raising flour
3-4 tbsp cocoa powder
1 tsp baking powder
225g unsalted butter
225g caster sugar
4 medium sized eggs
10 tbsp milk

For The Buttercream:
175g white chocolate
225g unsalted butter
300g icing sugar (more may be needed)
55ml double cream
1/2 tsp peppermint extract
1 tsp green food colouring

To Decorate:
175g dark chocolate
Packet of glacé cherries


1. Preheat oven to about 160c and prepare cupcake cases (I made about 12 large cupcakes in total).

2. Add flour, cocoa powder and baking powder together and set to the side

3. Beat together the butter and sugar until fluffy. Gradually mix in the egg until fully blended. Then add the flour mixture prepared earlier and the milk. Mix well.

4. Spoon the mixture into the cases and put them in the oven for about 25mins, or until cupcakes feel springy to the touch. Once done, leave them to cool.

5. To prepare the buttercream, melt the white chocolate and set to the side to cool.

6. Beat the butter until soft, then add the icing sugar and beat until smooth. Then whisk in the cream and peppermint. Once mixed together stir in the chocolate and a little food colouring. Add any more icing sugar to thicken if needed. Once ready, put into a piping bag.

7. Either using a spoon or a cupcake corer, make a small hole in the centre of each cupcake and pipe the buttercream into each hole, then carry on and pipe the rest of the cupcake.

8. To decorate, melt the dark chocolate and drizzle onto each cupcake, then once done, add a cherry to the top of each cake.

I was so very happy with how these turned out! The butter icing could have been a little more of a deep green colour, but you can still tell it's light green. I also didn't think adding only half a teaspoon of peppermint extract would be enough but the flavour is so strong, any more would have ruined it.

Over all I was over the moon about these, and my fiancé did the taste test and agrees also!
